Healthy Grilled Pizza Recipe

My husband and I were recently given a grill as a house warming gift. A super nice grill! Let me tell you, that thing is amazing!

Because of our excitement – let me rephrase that- because of my husband’s excitement, he’s been grilling everything under the sun! Since, we’ve had our share of hamburgers, steaks, and other “man” meals, I thought it was time to try something new…grilled pizza!

Ingredients:

  • 1 1/3 cups boneless, skinless chicken breasts, cooked & cubed
  • 1 cup black beans
  • 1 cup corn
  • 1 cup fresh tomatoes, diced
  • 1 pound frozen whole-wheat pizza dough
  • 2 tablespoons cornmeal
  • 1/2 cup barbecue sauce
  • 1 cup shredded mozzarella cheese

Directions:

Preheat grill to medium. Combine cooked chicken cubes, black beans, corn and tomatoes and stir until mixed thoroughly. Roll dough out until it’s 12 inches in diameter and then coat one side with cornmeal. Transfer the dough to the grill, close the lid and cook until the crust is lightly browned on the bottom (about 4-5 minutes). Flip the crust using a large spatula. Quickly spread the bbq sauce on the dough, top with the chicken mixture, and sprinkle on the cheese. Close the lid again and grill until the bottom of the dough is brown and the cheese has melted (about 4-5 minutes). *NOTE: If you don’t have a grill, you can prepare in a large grill pan or in oven according to the directions on the frozen dough.

Freezing Directions:

Once pizza has cooled, cut into 6 equal slices. Flash freeze. Then place each slice in a quart size freezer bag to freeze. To serve: defrost in the refrigerator overnight and then microwave at 50% power for 90 seconds.

  1. You’re making me wish we didn’t have a new coating of snow… and it wasn’t 10 degrees F this morning!! We LOVE grilled pizza — ours is usually topped with mushrooms, spinach and red bell peppers. I like this combo, though, and we’ll look forward to giving it a try.

    I bet this would be particularly good with roasted corn that I buy frozen at Trader Joes. Also, red onions and a pile of fresh cilantro. YUM!
