Hearty Paleo Vegetable Soup

Are you as excited as I am about soup season? I’m a big fan of soup for several reasons. It’s easy to use up leftover veggies before they go bad. Soup makes it easy to get a ton of healthy nutrients in one sitting. Plus, soup is fairly easy to pack for lunches. Before going Paleo, hearty vegetable soup meant white potatoes, corn, and lima beans. Thankfully, those were easy ingredients to replace since those are no-no’s for this diet. This Hearty Paleo Vegetable Soup is super easy to make and de-lish if I do say so myself! Hope you enjoy it too!

After cooking and draining the beef and onions, could it all be cooked in a slow cooker? Does it need to come to a boil first? Thank you

I found that 3 cups broth yields very little soup. I put in 64 oz. total. Also used the vegetables I had; asparagus, Brussels sprouts, radishes, and tomatoes. Haven’t tasted it yet, but hope it’s good!

we pulverized the veggies in this recipe, as we’re not big fans of carrots or celery. Now, once the liquid is drained, this makes AWESOME taco meat. I like it even better than the soup :)
