Homemade Ice Cream Sandwiches


We had a family date night the other night, and we all ate by candlelight. I had this wonderful thought in my head of what it was going to be like, but the only thing the kids wanted to do was try to blow out the candles. *sigh* Oh well, at least these babies didn’t let me down! Delicious, rich, homemade chocolate cookies sandwiched with your choice of ice cream, and toppings around the outside. So good, and so much better than store bought!

Homemade Ice Cream Sandwiches

  • 8 ounces butter, at room temperature
  • 0.5 cups powdered sugar
  • 0.25 cups brown sugar
  • 2 cups flour
  • 0.5 cup cocoa powder
  • 0.5 teaspoon salt
  • 2 teaspoons vanilla
  • 0.5 cups finely chopped bittersweet chocolate
  • 4 cups ice cream, any flavor
  • toppings (chopped nuts, sprinkles, toffee crumbles)


Preheat oven to 350F. With mixer, beat butter, powdered sugar and brown sugar until pale and fluffy. Stir dry ingredients together and add to mixer on low speed. Add vanilla and chocolate and blend until dough becomes dark brown. On floured surface, roll out dough to 1/4″ thickness and cut out cookies using round cookie cutter. Place on baking sheet covered in parchment paper. Bake for 15 minutes and allow to cool completely. Allow ice cream to soften slightly. Scoop approximately 1/2 cup and place on cookie. Cover with another cookie. Roll sides of sandwich in favorite toppings.

Freezing Directions:

Wrap each sandwich with parchment paper, then cover tightly with plastic wrap. Place in gallon freezer bag. TO SERVE: Do not thaw. Remove from bag, unwrap and enjoy.

Servings: 12 sandwiches

    Hi Ladies, just to let you know, when I changed the servings to 1/2 all changed to 1/2 except the butter. Thank you for all your hard work. Shawn

  2. Just a thought- these can totally be made dairy free! Sub a safe margarine, use Enjoy Life chocolate chips or chunks (semi-sweet rather than bittersweet because our choices are so limited!) and use soy or coconut ice cream. I’m going to make these. Thanks for the recipe!!!
