How to Get Your Family for April Fools!
For the past few years, I have been “fooling” my kids with a special April Fool’s Day Meal. The looks on their faces as they try to decipher what the food really is – well priceless doesn’t even begin to describe it! This past year we enjoyed Mini Pizzas for our main course with dessert of Blue Frosted Cake. as As they begin to eat – they will of course be pestering me with the questions of “what is it really mom?”, “is this going to be spicy?”, “PLEASE tell us what this food really is”. I follow a strict “Mum’s The Word” policy prior to the first bite…..as much for my enjoyment as anything!
The year before I made Faux Fish Sticks with sauce and a side of peas. Note if you try this recipe, allow plenty of time for the making of the peas…..my kiddos got a meager 8 peas per kids!
April Fools Pizza and Cake

- 2 flour tortilla shells
- strawberry jam
- white chocolate, melted for drizzling
- red fruit rollups, cut into circles
- green fruit roll ups, cut into 1″ strips
- peanuts, if desired
- your favorite meatloaf recipe
- apx 2 cups of mashed potatoes (homemade or instant)
- food coloring
Begin by preparing your favorite meatloaf recipe, dividing among 2 round cake pans for baking, topping one with your favorite meatloaf sauce. Bake as directed. Meanwhile, prepare your favorite mashed potatoes recipe, whether it be homemade or instant. Add a few drops of your food coloring to the potatoes, stirring until completely covered. Assemble “cake” by placing sauce topped meatloaf on a cake plate, topped by plain meatloaf. Frost with mash potatoes. If preparing this ahead of time you may need to reheat in microwave or oven to serve warm.
For the pizzas, place 2 flour tortillas on a baking sheet. Top with a generous amount of strawberry jam, spreading almost to the edges. Drizzle with melted white chocolate, and top with fruit roll up pieces. If desired, top with peanuts or chocolate chips as well.
