Lightened Up Italian Pasta Salad

  • 8 ounces penne pasta
  • 1 pound chicken, cooked and shredded
  • 0.5 cups carrots, shredded
  • 0.5 cups red onion, diced
  • 0.75 cups grape tomatoes, cut in half
  • 0.25 cups zucchini, diced
  • 6 Tablespoons Italian dressing, fat free
  • 0.25 teaspoons salt
  • 0.5 teaspoons black pepper


Cook pasta according to package directions until just al dente. Combine all ingredients in a large bowl and stir. Serve cold.

Freezing Directions:

Prepare pasta salad per above directions. Divide among quart freezer bags and label and freeze. TO SERVE: Thaw in fridge and serve cold.

    This one did not turn out well for me at all. I want to give it another shot, but will prep it differently next time – saute & brown the chicken instead of crock pot prep and keep the dressing out until serving day. I tried it today for lunch and couldn’t eat it after it was defrosted. Disappointed because it had a lot of promise based on the ingredients :(
