Lightened Up Monte Cristo Sandwich

  • 2 slices light bread
  • 1 teaspoons Dijon mustard
  • 2 slices deli turkey breast
  • 1 slices deli ham
  • 1 slices reduced fat Swiss Cheese
  • 0.5 teaspoons pepper
  • 0.25 cups liquid egg substitute


Top one slice of bread with mustard, turkey, ham, Swiss cheese and remaining slice of bread. Cut sandwich in half diagonally.  In a bowl, combine egg substitute and pepper. Spray skillet with non stick spray and heat to medium high. Dredge sandwiches through egg mixture, on each side. Place in skillet and cook until golden brown, flipping half way in between.

Freezing Directions:

Prepare per above directions and allow to cool completely. Wrap sandwich in plastic wrap, place in freezer bag, label and freeze. TO SERVE: Thaw. Reheat in microwave for 1-2 minutes.

    How does the consistency of these hold up? After freeze/thaw/microwave are they soggy or still pretty close to original?

      Lynne – they do stay pretty close to the original. If you are concerned, you can always reheat in a non stick skillet or in the oven.
