Mexican Turkey Tortilla Roll Ups

Ingredients:

  • 4 ounces light cream cheese, soften
  • 0.25 cups red onion, diced
  • 0.25 cups salsa
  • 2 Tablespoons cilantro, roughly chopped
  • 6 each flour tortillas
  • 10 ounces deli turkey meat
  • 0.5 cups reduced fat shredded cheddar cheese

Directions:

Beat cream cheese until smooth. Stir in red onion, salsa and cilantro. Divide cream cheese mixture evenly over flour tortilla shells. Top evenly with turkey and sprinkle cheese evenly over the top. Tightly roll tortillas and wrap with plastic wrap until ready to serve.

Freezing Directions:

Prepare per above directions Divide between indicated number of gallon freezer bags, label and freeze. TO SERVE: Thaw. Unroll from plastic wrap and serve.

    How do we divide the 6 rolls into 8 servings?

    These were really good! I used Jalapeno cream cheese and thin cheddar slices instead of plain cream cheese and shredded cheddar and it worked perfectly :)
