Mini Banana Power Muffins

My kids love homemade banana bread, and I am certain they would be okay if I served it for after school snack every single day.  However, I am always on the look out for a new recipe to wow their taste buds.  With honey as the sweetener and protein powder to give a little extra nutrition, these little muffins are a great power breakfast or snack option for any growing (and hungry) family!

 Mini Banana Power Muffins

  • 1 large ripe banana, mashed
  • 4 egg whites
  • 2 cups whole grain old fashioned oats
  • 1/2 cup plain greek yogurt
  • 1/4 cup honey
  • 2 scoops vanilla protein powder
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 .5 tsp vanilla
  • 1 tsp cinnamon
  • 1 Tbsp whole grain flax seeds


Preheat oven to 350F. Line muffin pan with paper liners or grease well with butter.   Combine all ingredients in a medium bowl.  Divide evenly into mini muffin tin.  Bake 12-15 minutes or until tops are set.  

Freezing Directions:

Allow muffins to cool completely.  Place in gallon freezer storage bag.  Label and seal.  TO SERVE: Thaw on countertop.  Enjoy!

Servings: 24 mini muffins

    Made these to take on vacation for a quick healthy breakfast and everyone loved them! Nobody believed me when I told them they were healthy! I am about to make a huge batch for the freezer!
