Oatmeal Banana Bread

  • 0.25 cups brown sugar
  • 2 Tablespoons light butter, softened
  • 0.25 cups egg substitute
  • 0.25 teaspoons vanilla extract
  • 0.5 cups unsweetened applesauce
  • 0.66 cups bananas, mashed
  • 1.25 cups all purpose flour
  • 0.5 teaspoons baking soda
  • 0.25 teaspoons salt
  • 0.5 cups quick cooking oats


In a large bowl, beat brown sugar, butter, egg substitute, vanilla extract, and applesauce. Gently fold in bananas. In a medium bowl, combine flour, baking soda, salt and quick cooking oats. Slowly mix the dry ingredients into the wet ingredients. Pour into a greased loaf pan. Bake at 350F for 45-50 minutes.

Freezing Directions:

Prepare bread per above directions and allow to cool. Slice into servings, divide into gallon freezer bags, label and freeze. TO SERVE: Thaw. Enjoy at room temperature or warmed through in microwave if desired.

    Where do you find light butter? I can’t find it anymore in NC at food lion, Walmart, or the co-op.

      Deborah – If you aren’t counting calories you can simply use your regular butter. However, if you are unable to find a light butter, you may need to look for a similar light butter product or margarine.

    Can I use one egg in place of the egg substitute? Also, can I use old fashioned oats instead of quick oats?

      Hi Stephanie, you can certainly make those changes but it will change the nutritional info on the recipe. It should taste fine though. Enjoy!

    I have this for serving 2 people and the serving size total is 4. Do I really need two loaf pans?

      Rachel – if you could clarify so I can better troubleshoot. Are you doing this in menu builder and have selected 2 for the number of servings?
