Paleo Beef Lettuce Wraps

Sometimes I like to assemble all the items for a freeze meal and freeze prior to cooking. This Paleo Beef Lettuce Wrap recipe is one of those meals. You can assemble all of the ingredients, buy ground beef when needed (or use part of that cow portion stocked in your freezer), and have an easy to prepare meal ready to go!

Paleo Beef Lettuce Wraps

Ingredients:

  • 2 Tablespoons coconut oil (serving day)
  • 1 pounds ground beef
  • 0.66 cups onion, diced
  • 0.125 teaspoons sea salt
  • 2 teaspoons garlic, minced
  • 2 Tablespoons ginger, peeled & minced
  • 2 Tablespoons coconut aminos
  • 4 teaspoons rice vinegar
  • 1 Tablespoon sesame oil
  • 1 Tablespoons almond butter
  • 2 teaspoons water
  • 2 teaspoons honey, raw
  • 2 teaspoons chili garlic sauce or sriracha
  • 0.5 cups green onions, chopped
  • 0.5 cups water chestnuts, chopped (serving day)
  • 0.25 cups cashews (serving day)
  • 10 each lettuce leaves, rinsed & patted dry (serving day)

Directions:

Heat oil in a large skillet over medium-high heat. Saute onion. Add beef and cook until brown. Drain fat if necessary. In a small saucepan, cook sea salt, garlic, ginger, coconut aminos, rice vinegar, sesame oil, almond butter, water, honey, and sriracha until heated. Stir until it has a smooth consistency. Add  mixture to beef. Stir in green onions and water chestnuts and cook until heated through. Scoop into lettuce leaves and top with cashews.

Freezing Directions:

Dice onion and place in quart freezer bag. Portion green onions in a sandwich bag and add bag of onions. Combine salt, garlic, ginger, coconut aminos, rice vinegar, sesame oil, almond butter, water, honey, and chili garlic in another quart freezer bag. Tape the two freezer bags together and place with ground beef. Label and freeze. To serve: Thaw. Heat oil in a large skillet add onion from freezer bag. Add beef and cook until brown. Drain fat. In a small saucepan, cook contents of other freezer bag until heated and stir until it has a smooth consistency. Add to beef. Stir in green onions and water chestnuts and cook until heated through. Scoop into lettuce leaves and top with cashews.
