Paleo Buffalo Chicken Wings

My husband LOVES chicken wings.  Like eating 25 at a sitting, taking advantage of “all you can eat wing nights.” loves them .  So imagine his excitement when I shared that he could eat his wings without compromising our newly adopted Paleo eating lifestyle!  And even if you aren’t diving into the Paleo craze, these wings are still a great Saturday afternoon snack, or favorite tailgating food!

Paleo Buffalo Chicken Wings

Ingredients:

  • 12 chicken wings
  • 0.50 cups ghee
  • 0.50 cups Franks Red Hot Sauce (READ the label to ensure compliance) otherwise we LOVE Tessemae’s Wing Sauce which is 100% compliant and delicious!)
  • 2 teaspoons onion powder
  • 2 teaspoons garlic powder
  • sea salt, to taste

Directions:

Preheat oven to 425F.  Heat ghee in a small bowl.  Add hot sauce, onion powder, garlic powder, and sea salt.  Combine thoroughly.  Place chicken wings in a large bowl, pouring sauce over top and stirring to coat.  Place wings on a foil lined baking sheet (or wire rack for crispy wings), skin side down and bake for 20 minutes.  Remove from oven, flip wings, and baste with remaining sauce.  Return to oven and bake for an additional 20 minutes.  Serve with additional hot sauce, celery or blue cheese dressing.  

Freezing Directions:

Heat ghee in a small bowl.  Add hot sauce, onion powder, garlic powder, and sea salt.  Combine thoroughly. Place wings in a gallon freezer storage bag.  Pour marinade into bag, seal and shake vigorously to coat the chicken.  Label and freeze.  TO SERVE:  Thaw.  Preheat oven to 425F.  Place wings on a foil lined baking sheet (or wire rack for crispy wings), skin side down and bake for 20 minutes.  Remove from oven, flip wings, and baste with remaining sauce.  Return to oven and bake for an additional 20 minutes.  Serve with additional hot sauce, celery or blue cheese dressing.

Servings: 12 chicken wings

    The recipe says to baste with remaining sauce (what remaining sauce)?

    Is that a paleo thing? If I don’t do paleo can I use butter?

    could i cook a bunch and freeze some so they are quick microwave ready for my husband

      Yes, you definitely could do that too. Just follow the baking instructions for the serving day. Let them cool. Package and freeze.

    Can you use boneless breasts.

      Adrianne – If you use boneless breasts I would suggest to cut them into strips, to lessen the cooking time. Let us know how they turn out!

    I’m having trouble finding ghee – do you think olive or coconut oil could be used as a replacement?
