Paleo Chocolate Chip Cookie Cake

If your family is Paleo or gluten free, today might be an especially difficult day of temptation. Whether you are giving out candy, taking your kids around to receive it, or just navigating treats and bowls of candy at the office – hang in there! And when you get home, you might want to make yourself some of this guilt free dessert as a reward for all your hard work. This is also a wonderful dessert to have on hand heading into the holiday season. Offer to bring a sweet treat to your next gathering. It is a nice gesture to your host who may be nervous about your dietary restrictions, and you won’t feel like you have to miss out on the holiday cheer.

Paleo Chocolate Chip Cookie Cake

Ingredients:

  • 2 cups sifted almond flour
  • 0.5 teaspoons baking soda
  • 0.25 teaspoons sea salt
  • 0.75 cups soy free, dairy free chocolate chips (such as Enjoy Life brand)
  • 0.25 cups chopped walnuts
  • 0.33 cups honey
  • 0.25 cups melted coconut oil (plus extra for greasing pan)
  • 1 large egg (organic preferred)
  • 0.5 teaspoons vanilla extract

Cooking Instructions:

In a large bowl whisk together almond flour, baking soda, sea salt, chocolate chips, and nuts. In a small bowl, melt honey and coconut oil in the microwave if necessary. Add honey mixture, egg, and vanilla to the dry ingredients and mix to combine. Chill dough in the refrigerator for 30 minutes. Preheat oven to 350 degrees. Grease 8 x 8 foil baking pan with coconut oil. Remove dough from refrigerator and pour evenly into the pan. Bake at 350 degrees for 30-35 minutes. Test doneness with a toothpick. Cool or serve warm with coconut milk ice cream.

Freezer Instructions:

Prepare and bake as directed above. Cool cake completely. Cover with foil, label, and freeze. (To serve individual portions, cut and place in freezer bags. Label and lay flat to freeze.) TO SERVE: Thaw and serve or warm and serve with coconut milk ice cream if desired.

    How much honey? And can I substitute honey with something else like sugar or brown sugar? I have no honey but wanted to make these ASAP!

    Do you know of any true paleo options for chocolate chips? The Enjoy Life brand states that it includes brown sugar… I’m new to a paleo lifestyle, so I am not positive, but I thought brown sugar was non-paleo. Is that incorrect?

      Hi Bri, I use the Enjoy Life chips and they use evaporated cane juice to sweeten them. Paleo yes, but only in moderation.

    Is this recipe for only one 8×8 pan? I don’t understand what “indicated number of 8×8 foil baking pans” means. And can I use just regular metal or glass pans instead?
