Paleo Mushroom and Steak Skewers

 

Marinades can sometimes be tricky when you’re trying to eliminate gluten, corn, and processed items. The good thing is, it’s super easy to make your own marinade. This is a simple marinade (with a kick) to use on a simple meal like Mushroom and Steak Skewers. Next time you invite friends over at the last minute to grill out, pair these skewers with a salad. Your friends will gobble them up, and you’ll look like a champ!

Paleo Mushroom and Steak Skewers

Ingredients:

  • 1 teaspoon hot sauce
  • 1/4 cup  extra virgin olive oil
  • 1/2 cup balsamic vinegar
  • 2 teaspoons dried oregano
  • 1 pound steak, cubed
  • 8 ounces baby portobello mushrooms
  • bamboo or metal skewers

Directions:

In a medium size bowl, whisk together hot sauce, olive oil, balsamic vinegar, and oregano. Add steak cubes and mushrooms and mix together until coated. Cover and marinate in refrigerator 30 minutes to 1 hour. If using bamboo skewers, soak in a pan of water. Preheat grill. Alternate steak cubes and mushrooms on the skewers. Grill 5-10 minutes or until meat is cooked to your liking.

Freezing Directions:

If using bamboo skewers, soak in a pan of water. In a medium size bowl, whisk together hot sauce, olive oil, balsamic vinegar, and oregano. Alternate steak cubes and mushrooms on the skewers. Put skewers in a gallon size freezer bag and pour marinade over meat. Remove as much air as possible, seal, label and freezer flat. To serve: Thaw. Grill 5-10 minutes or until meat is cooked to your liking.

    how long do you marinade? the regular directions don’t use the marinade.
