Paleo Power Balls

  • 6 Medjool dates
  • 8 dried apricots
  • 0.5 cups hot water
  • 0.125 teaspoons sea salt
  • 0.5 cups almond butter
  • 0.25 cups dried cranberries
  • 0.5 cups sunflower seed kernels
  • 0.5 cups shredded unsweetened coconut flakes


Soak dates and apricots in hot water for 5 minutes. Reserve water. In a food processor, pulse together apricots, dates, salt, and nut butter until a paste is formed. Add cranberries and pulse. Add sunflower seeds and pulse just to combine. If the mixture is too dry, add 1 Tablespoon of the hot water in which the dates and apricots soaked. Form mixture into Tablespoon sized balls. Roll in coconut to coat. 

Freezing Directions:

Prepare per above directions. Flash freeze. Once frozen, divide into freezer bags, label and freeze. TO SERVE: Thaw partially. Enjoy cold!

Servings:  4 (4 balls per serving)

    6 tsp is a lot of salt!? Am I reading it wrong? I did 3 tsp and it still is WAY to salty (i love salty even)
