Paleo Taco Salad

 

I am so excited for Spring to be here because I love warm weather and the fresh produce that comes with it! Since fruits and vegetables are plentiful, it makes me happy to pull a delicious dish out of the freezer to serve alongside the produce. This Paleo Taco Salad recipe does just that. It’s easy to cook a big batch of the taco salad meat and freeze in batches that fit the size of any family. Just pull a bag out of the freezer, thaw, and dump on a giant salad for a quick, filling, Paleo-approved meal!

Paleo Taco Salad

Ingredients:

  • 1 Tablespoon chili powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon crushed red pepper flakes, optional
  • 1/4 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1 1/2 teaspoon ground cumin
  • salt, to taste
  • 1 pounds ground beef, grass-fed and finished preferred
  • lettuce (base for your salad)
  • Suggested Paleo toppings: tomato, olives, avocado

Directions:

Heat a large skillet over medium-high heat and begin to brown ground beef.  When cooked through, add spices and 1/2 cup water. Stir until thoroughly seasoned. Serve on lettuce and top with your favorite Paleo approved toppings like tomatoes, olives, avocado and lime.

Freezing Directions:

Heat a large skillet over medium-high heat and begin to brown ground beef.  When cooked through, add spices and 1/2 cup water. Let cool. Place in freezer bag, label, and lay flat to freeze. To serve: Thaw. Reheat.  Serve on lettuce and top with your favorite Paleo approved toppings like tomatoes, olives, avocado and lime.

    Do you put a dressing on this salad? If so, what kind?

      If I use dressing, I usually just squeeze a 1/2 lemon or lime of the dish. Sometimes an olive oil/rice vinegar could work depending on the type of salad.
