Parmesan Herb Stuffed Chicken

  • 0.25 teaspoon salt
  • 0.25 teaspoon pepper
  • 1 Tablespoon flat leaf Italian parsley,
  • 1 Tablespoon basil,
  • 1 Tablespoon dill, minced
  • 1 teaspoon garlic, minced
  • 0.25 cup Parmesan cheese, grated
  • 0.25 cup breadcrumbs finely crushed
  • 0.67 pounds boneless skinless chicken breasts
  • 0.5 Tablespoon Italian seasoning


In a small bowl, combine salt, pepper, parsley, basil, dill, garlic, Parmesan cheese, and breadcrumbs.  Set aside. On a clean working surface, or cutting board, cut a pocket into each chicken breast. Do not cut all the way through. Stuff each chicken breast evenly with herb/cheese mixture, packing in tightly. Rub Italian seasoning evenly over the top of the chicken breasts and place in baking pan. Bake 350F for 35-40 minutes or until chicken is cooked through.

Freezing Directions:

Prepare chicken and place in baking pan, but do not bake. Cover tightly with aluminum foil, label and freeze. TO SERVE: Thaw. Bake uncovered 350F for 35-40 minutes or until chicken is cooked through.
