Peanut Butter Banana Bread

Although I love banana bread, my chances to make it are few. I feel like I am constantly buying bananas, but my family eats them way before they ever start to turn brown. When I decided to try out this recipe, I had to put a little sign by my bananas asking everyone not to eat them. Luckily, it worked and I got to try this delicious bread. This bread has a slight peanut butter flavor but my favorite part is the delicious peanut butter glaze.

Peanut Butter Banana Bread

Ingredients:

  • 2 cups white whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 3 large bananas, ripe and mashed
  • 0.5 cup peanut butter #1
  • 2 large eggs
  • 0.75 cup brown sugar #1
  • 1 teaspoon vanilla extract
  • 0.5 cup butter, room temperature
  • 0.25 cup buttermilk
  • 0.25 cup peanut butter #2
  • 2 Tablespoons milk
  • 1 Tablespoon brown sugar #2
  • cooking spray

Directions:

Preheat oven to 375 degrees Fahrenheit. Spray 9 x 5 loaf pan with cooking spray. Mix flour, baking soda, baking powder, and salt in a large mixing bowl. In another large bowl, combine bananas, peanut butter #1, eggs, brown sugar #1, vanilla, butter, and buttermilk. Combine two bowls, mixing until just combined. Pour mixture into combined loaf pan. Bake for 1 hour or until a toothpick comes out clean. Remove bread from oven and allow to cool. Mix peanut butter #2, milk, and brown sugar #2 in a small bowl until combined. If peanut butter is too thick to stir, melt in microwave for 15 seconds. After bread has cooled, spread peanut butter mixture evenly on top of bread.

Freezing Directions:

Follow directions above. Flash freeze bread, so that peanut butter spread freezes and does not stick to tinfoil. Remove from freezer, cover with tinfoil, label, and freeze. To Serve: Thaw. Microwave for 30 seconds, or until warm.
