Philly Cheese Potato Pizza

Ingredients:

  • 16 ounces refrigerated pizza dough
  • 8 ounces small fingerling potatoes, extra thinly sliced like pepperoni
  • 0.33 cups white onion, sliced
  • 2 Tablespoons olive oil
  • 2 teaspoons chopped garlic
  • 0.25 teaspoons salt
  • 0.25 teaspoons pepper
  • 1 cup shredded provolone cheese
  • 0.33 cups green bell pepper, sliced
  • 0.33 cups red bell pepper, sliced

Directions:

Preheat oven to 350 degrees. Spread out your pizza dough into a 12″ circle. Bake dough at 350 for 5 minutes. Remove from oven, layer with potatoes, onion, olive oil, garlic, salt and pepper. Top with cheese and peppers. Bake at 350 for 12 minutes until cheese is melted and bubbly.

Freezing Directions:

Preheat oven to 350 degrees. Spread out your pizza dough into a 12″ circle. Bake dough at 350 for 5 minutes. Remove from oven, layer with potatoes, onion, olive oil, garlic, salt and pepper. Top with cheese and peppers.  Bake at 350 for 12 minutes until cheese is melted and bubbly.  Allow to cool, then wrap tightly in foil.  Place in gallon freezer bag, label and freeze. TO SERVE: Do not thaw. Reheat in oven at 325 for 15-20 minutes.

    How do you recommend baking the potato slices?

      I’ve updated the instructions but you will actually add the potatoes to the pizza uncooked, similar to pepperoni slices. Then they will cook in the oven when the pizza bakes.
