Pizza Spiral Makeover

  • 1 Tablespoons olive oil
  • 1.25 cups red onion, diced
  • 2 teaspoons garlic, minced
  • 0.5 cups carrots, grated
  • 0.75 cups zucchini, grated
  • 1 batch homemade pizza dough
  • 1 cups pizza sauce
  • 0.75 cups ground beef, browned
  • 1 cups shredded cheddar cheese
  • 0.5 teaspoons oregano, dried
  • 0.5 teaspoons basil, dried
  • 0.5 teaspoons sea salt


In a skillet, warm olive oil over medium heat. Add onions, garlic, carrots, and zucchini. Saute until onions are translucent. Roll out dough on a floured surface into a large rectangle, about 1/4 inch thick. Evenly spread pizza sauce over dough, followed by the sauteed vegetable mix, ground beef, shredded cheddar cheese, oregano, basil and sea salt. Roll the dough into a long spiral, then cut into 1” slices using a baker’s scraper or spatula. Place spirals on a parchment paper lined baking sheet and bake at 350F for 18-20 minutes.

Freezing Directions:

Prepare spirals per above directions. Flash freeze after baking. Divide between gallon freezer bags. Label and freeze. TO SERVE: Reheat in microwave for 30-60 seconds.

    Here was my cheat – have the bread machine make dough for you. I just used the dinner roll dough recipe that came with the machine and let it rise in the machine till double. It is still fresh dough that way, but a whole lot less hands on!

    Are these good cold, for lunches the next day? I guess I can just try it out with my kiddos?
