Pumpkin Spice Krispy Rice Bars

I admit it, I tend to go a little overboard on fall inspired baking.  From No Bake Pumpkin Oatmeal Cookies to Mini Pumpkin Spice Muffins, its a good thing my family loves the flavors of fall too!  Not to leave any classic treat behind, I have infused the flavor of fall into krispy rice bars, for a delicious, ooey, gooey, fall flavored treat!

  • 4 Tbsp butter
  • 10 oz marshmallows
  • 2 Tbsp pumpkin pie spice
  • 5.5 cups crisp rice cereal

In a saucepan over medium heat, melt butter and marshmallows.  Stir occasionally so the mixture doesn’t burn.  When the marshmallows are melted, add the pumpkin pie spice and stir to combine.  Remove from heat and add crisp rice cereal one cup at a time, stirring so that all cereal is coated.  Transfer immediately to a greased 9X13 baking pan, pressing down bars.  Let cool 10 minutes before serving.

Freezing Directions:

Prepare as directed above then wrap bars in plastic wrap.  Place in gallon freezer bag, label and freeze.  To serve: thaw and enjoy!

Servings: 15

really tasty! I was afraid the pumpkin pie spice would be too strong, but it wasn’t – just fall-like and delicious.

  2. Have you tried the pumpkin marshmallows?? I saw those at the store tonight, and this recipe made me think of them! I’ll be it would be delicious!

Hillary – We have purchased them but they got eaten and never made it to a recipe! But I am sure that you could substitute the pumpkin ones for the regular marshmallows and decreased the amount of pumpkin pie spice. Let us know how it turns out!
