Rice Krispies Peanut Butter Eggs

Today I have a Rice Krispies Treats recipe that doesn’t involve the freezer! *GASP* I know, what am I thinking?

This recipe was the brainstorming of myself and a few friends. Even though it isn’t a freezer recipe it does still represent who I am, a mom, always looking for creative ways to entertain the kiddos. And this is the “Buckeye” version of Rice Krispies Treats. And since I hail from the great state of Ohio it seemed only appropriate that this be in the mix!

Ingredients:

  • 1 batch Rice Krispies Treats
  • 6 oz packaged powdered sugar
  • 1 cup creamy peanut butter (divided)
  • .33 teaspoons vanilla
  • .125 teaspoons salt
  • 12 oz milk chocolate chips
  • 4 Tablespoons unsalted butter (for melting chocolate)
  • 14 jumbo plastic Easter Eggs
  • 14 bamboo skewers
  • Butter spray
  • Embellishments
    • Sprinkles
    • Chocolate Chips
    • Colored Sugar
    • Colored Icing
    • Candies

Directions:

Blend sugar, 1/2 cup of peanut butter, margarine, salt and vanilla until smooth. Shape into 1 inch balls. Set Aside.

Prepare one batch of Rice Krispies Treats, adding 1/2 cup of peanut butter to the melted marshmallows before adding Rice Krispies. Stir. Using butter spray, spray the inside of 14 Jumbo Easter Eggs. Fill the plastic Easter Eggs with the Rice Krispies Treats mixture, leaving enough room to place the peanut butter ball. Insert peanut butter ball and close egg. Set aside for an hour or refrigerate to to allow Rice Krispies Treats to set faster.

In a microwave safe bowl, place the chocolate, then add 4 Tablespoons butter on top in center. Microwave on medium for 2 minutes, then stir. Continue microwaving on medium for 30 seconds to 1 minute more, until chocolate and butter are all melted, stirring frequently.

When set, remove Rice Krispies Treats from egg. Place a bamboo skewer into them. Dip them in melted chocolate covering thoroughly and place them on a sheet of wax paper to cool. Decorate with sprinkles at this point if you would like. Allow to harden at room temperature or in refrigerator. After chocolate has set, you may continue decorating eggs with icing. Serve.

Freezing Directions:

These may be frozen after decorating or chocolate has set. Place them in a gallon freezer bag for storage. Thaw before serving.

    I’ve looked at all 3 and if this contest is really tying in with Easter, than I would go for the eggs. If it is really just about the rice crispies, than I would go with the ice cream sandwiches. More versatile for the time of the year.

    You have really got me craving rice krispie treats! I was going to make the egg dipper ones off of their website, but after seeing this recipe, I will be trying your recipe! They are the perfect combo of rice krispie treats and choc. pb eggs – two of my favorites!! Good job and good luck!

    I printed out the recipe to make these this week. After reading the recipe a little closer I have a question about the amount of butter/margarine to use in the recipe.

    I understand that I need 3T butter to make “1 batch Rice Krispies Treats”. Your ingredient list calls for another 4 T unsalted butter, but I’m not sure where to use it. The instructions for the peanut butter balls calls for “margarine” and then the chocolate coating calls for “butter”. Do I divide the 4 T butter between the peanut butter balls and the chocolate coating or is the ingredient list missing the margarine?

      I didn’t include the amount of butter needed for the Rice Krispies Treats since I just listed needing to make one batch. You actually need the butter for the peanut butter balls and the chocolate. I’ll take a closer look to figure out how much for each.

    Love Rice Krispies have for years. I am eager to try two of your recipies. The Easter baskets and the peanut butter Easter eggs. I would have to vote for the Peanut Butter Easter eggs they look heavenly!
