Rosemary Parmesan Chicken & Sweet Peppers

Ingredients:

  • 1 cups parmesan cheese, grated
  • 2 Tablespoons dried rosemary
  • 1 teaspoons garlic powder
  • 0.5 teaspoons black pepper
  • 0.125 teaspoons salt
  • 7.5 cups chicken, diced
  • 0.25 cups olive oil
  • 48 sweet peppers

Directions:

In a bowl, combine parmesan cheese, rosemary, garlic powder, pepper, and salt. Toss chicken in olive oil, then sprinkle cheese mixture over chicken. Arrange chicken and sweet peppers on skewers. Grill over medium high heat for 7-8 minutes per side, until chicken is cooked through.

Freezing Directions:

In a bowl, combine parmesan cheese, rosemary, garlic powder, pepper, and salt. Divide chicken, olive oil and cheese mixture into gallon freezer bags. Divide sweet peppers into quart freezer bags. Place one sweet pepper bag in each gallon bag, label and freeze. TO SERVE: Thaw. Arrange chicken and sweet peppers on skewers. Grill over medium high heat for 7-8 minutes per side, until chicken is cooked through.

    Forgot to mention that I used a recipe for 8 servings. I used 2 – 1 lb bags of sweet peppers for the 8 servings.
