Salsa Chicken & Black Bean Wrap

This is a delicious slow cooker option for either lunch or dinner.  They have just enough of a kick of spice to awaken your senses but not send you running for a drink.  Everything can be thrown into the slow cooker and then piled into a tortilla, packed full or taste and protein.

Salsa Chicken & Black Bean Wrap

Ingredients:

  • 4.25 cups chicken, cubed
  • 3 cups salsa
  • 4 ounces green chiles
  • 7 teaspoons taco seasoning (ensure gfdf)
  • 6 gluten free tortillas (purchased or make your own)
  • 2 cups black beans, drained
  • 6 Tablespoons dairy free sour cream  (optional topping)
  • 6 Tablespoons dairy free shredded cheese (optional topping)

Directions:

Grease the inside of a slow cooker with nonstick cooking spray. Place chicken in slow cooker.  Add salsa, chiles and taco seasoning.  Stir to make sure everything is mixed well.  Cook on high for 6 hours.  Drain off any excessive liquid that may have collected around the bottom of the slow cooker. Add black beans, stirring to combine.    Spoon filling into tortilla and sprinkle with dairy free cheese and sour cream, if desired.  Fold tortilla, tucking ends in as you roll.

Freezing Directions:

Follow above directions, reserving dairy free cheese and dairy free sour cream for serving day.  Wrap individually in plastic wrap and place in a gallon size freezer bag.  Label & seal.  TO SERVE:  Remove plastic wrap and cover with a damp paper towel.  Reheat in microwave for 30-45 seconds, or until heated through.  Sprinkle with dairy free cheese and sour cream, if desired.

    does the chicken have to be cooked prior to putting in to the crock pot?

    Is the salsa just a topping like sc and cheese or is it to be cooked w chicken or mixed into filling?

    Can’t digest onions, peppers, or beans. Anyone have good substitutes?

    Just got done eating this delicious meal. :) So easy to make and has great flavor. I will definitely be making this again when I need a dinner that does not take long to prep or serve.
