Salted Chocolate Nutella Cookies

Now that Halloween is out of the way, and November is here, it is time to turn our focus to the holidays. I don’t bake much, but around Thanksgiving and Christmas I do enough to last the entire year! I am planning to have a cookie swap this year, something I say I’m going to do every year, but seem to never get around to it.  One way to help alleviate baking stress around the holidays is to do your baking early and stash your goodies in the freezer. That way, when you need to take something to a potluck or are worrying about hosting a cookie swap at your home, the hardest part has been done for you!

These salted Nutella Cookies are heavenly. They are a crisp cookie (just the way I like them) with Nutella sandwiched between two of them. The extra sprinkle of sea salt on top accentuates the chocolate cookies nicely. These cookies will make a delicious addition to a cookie platter as a gift or at a cookie swap.

Salted Chocolate Nutella Cookies

Ingredients:

  • 1.25 cups all-purpose flour
  • 0.25 cups unsweetened cocoa powder
  • 0.25 cups oats, lightly ground in food processor
  • 1 teaspoon baking soda
  • 0.25 teaspoon baking powder
  • 0.75 cups unsalted butter, softened
  • 1 ounce Nutella (about 2 Tablespoons)
  • 1.5 cups sugar
  • 1 medium egg
  • sea salt
  • 12 ounces Nutella (for filling)

Directions:

Preheat oven to 375 degrees. Line baking sheets with parchment paper. Whisk flour, cocoa powder, oats, baking soda and baking powder. Set aside. In a separate bowl, cream together butter, Nutella, and sugar until light and fluffy. Mix in egg. Slowly add in flour mixture until incorporated. Use 1/2 Tablespoon measuring spoon to roll dough into balls. Place 12 cookies on cookie sheet. Flatten with bottom of glass. Sprinkle each with a pinch of sea salt. Bake for 8 minutes and allow to cool completely. Spread Nutella between two cookies and sandwich.

Freezing Directions:

Prepare cookies as directed above. Place in freezer bag, label, and freeze. To serve: Thaw.

Servings: 24 sandwich cookies
