Sausage & Kale Soup

Sausage Kale Soup

  • 2 Tablespoons coconut oil
  • 2 carrots, peeled and chopped
  • 2 stalks celery, chopped
  • 1.25 cups red onion, chopped
  • 4 cloves garlic, minced
  • 4 cups chicken broth (homemade preferred)
  • 1 Tablespoon Italian Seasoning
  • 1 teaspoon salt
  • 0.5 teaspoon pepper
  • 14 ounces coconut milk (full fat)
  • 1 cup chopped kale
  • 1.5 cups sausage, browned


In a large stock pot over medium heat, melt coconut oil. Add carrots, celery, and red onion. Saute until onions are translucent.  Add garlic and continue to saute an additional minute. Add chicken stock, Italian seasoning, sea salt, pepper and coconut milk to the stock pot. Increase to medium high heat until it begins to simmer. Lower to medium and stir in kale and sausage. Cover and simmer for 20 minutes.

Freezing Directions:

Cook as directed above. Remove from heat and allow to cool completely. Divide soup into quart sized freezer storage bags. Label and freeze. TO SERVE: Thaw. Transfer contents to microwave safe bowl. Reheat for 1-2 minutes until heated through.

    I have all the ingredients for this except the coconut milk. Can I substitute?

      Tonya, you could substitute regular milk or cream if you aren’t trying to stay Paleo. Or you could use almond milk for a Paleo option. Hope that helps!

    I’m glad I found your recipe after googleing “coconut, sausage and kale soup”. I had some chicken sausage links on hand that I browned up and used instead of the beef sausage. I will try my hand at your beef sausage recipe and use that next time I make this. Thanks for sharing the recipe!
