Slow Cooker Chicken Gyro

 

I love lazy summer days when I don’t have to think very hard about what to make for dinner. The day that we had these chicken gyros, I put everything in the slow cooker late in the morning, we went to spend the day at the pool, came home and rested a bit, and dinner was ready! My slow cooker isn’t used only in cooler months – it is my kitchen BFF year round!

This chicken has few ingredients, but big flavor! We ate it on pita bread with lettuce, tomato and tzatziki sauce. Just what our big appetites needed after a day of playing hard at the pool!

Slow Cooker Chicken Gyro

Ingredients:

Directions:

Place all ingredients in slow cooker. Cook on low for 6-8 hours. Just before serving, shred chicken. Serve on pita bread with tzatziki sauce and toppings of choice.

Freezing Directions:

Place chicken in freezer bag. Add all other ingredients. Seal, label and freeze. TO SERVE: Thaw. Empty contents of bag into slow cooker. Cook on high 3-4 hours or low 6-8 hours. Just before serving, shred chicken. Serve on pita bread with tzatziki sauce and toppings of choice.
