Slow-Cooker Paleo Chicken Lettuce Wraps

A few weeks ago, I spent two minutes and thirty-six seconds (give or take a couple of seconds) to dump eight ingredients into a slow-cooker. Then I went on my merry way for the day. When I came home, I was starving! So, I did what any good mom would do and did a little taste test. Let me tell you, it was all I could do not to gobble up the entire mixture for these Paleo Chicken Lettuce Wraps! I had to practically tape my mouth shut to save some for my family. I think it’s the balsamic vinegar that makes the difference in this dish. It adds a punch of flavor that compliments the coconut aminos so well. I highly recommend this super easy dish…but if you make it, you may want to consider doubling, maybe tripling, the ingredients!

Paleo Chicken Lettuce Wraps

Ingredients:

  • 1 pound ground chicken
  • 5 cloves garlic, minced
  • 2 onions, chopped
  • 4 Tablespoons coconut aminos
  • 4 Tablespoons chicken broth, preferably homemade
  • 2 Tablespoons balsamic vinegar
  • 1/2 teaspoon dried ginger
  • 1/8 teaspoon allspice
  • 1/2 cups water chestnuts, drained and chopped
  • 1/8 cup green onions, thinly sliced (optional)
  • Lettuce leaves (for serving)

Directions:

Place ground chicken into in slow-cooker and break into small pieces. Add chopped onions, garlic, coconut aminos, chicken broth, ginger, allspice and balsamic vinegar. Cover and cook for 4-6 hours on high, 6-8 on low. When finished cooking, stir in sliced green onions. Serve in lettuce leaves and enjoy!

Freezing Directions:

Place ground chicken into in slow-cooker and break into small pieces. Add chopped onions, garlic, coconut aminos, chicken broth, ginger, allspice and balsamic vinegar. Cover and cook for 4-6 hours on high, 6-8 on low. When finished cooking, stir in sliced green onions. Let cool. Divide into indicated number of freezer bags, label and freezer flat. To serve: Thaw. Reheat. Serve using lettuce leaves as the wrap.
