Slow Cooker Smoked Pork Recipe

My husband loves to listen to the Splendid Table. He has actually made me a convert as well. In fact, if I could ever manage to make it on to that show I think I would be a super star in his eyes. Although I may have reached that status having met Annett Davis recently.

One afternoon after having listened to the show he came in and told me he had heard about a smoked pork butt recipe that we HAD to try. Seriously, he begged me for about two weeks straight to make this. I finally did! It was so good and amazingly enough tasted just like it had come out of the smoker.

Ingredients:

  • 5    pounds    boneless Boston butt pork roast or same weight of boneless country-style pork ribs
  • 0.25    cup    paprika
  • 0.125    cup    kosher salt
  • 0.125    cup    coarsely ground black pepper
  • 1    Tablespoons    garlic powder
  • 1    Tablespoons    dry mustard
  • .5    cup    liquid smoke
  • barbecue sauce for serving

Directions:

Cut the pork butt into 2- to 3-inch chunks (if using ribs, don’t cut). Place in slow cooker with the remainder of the ingredients for 10-12 hours on low or 5-6 hours on high, until meat is pull-apart tender and reaches an internal temperature of 190F. Shred meat. Serve with warmed barbecue sauce.

Freezing Directions:

Cut the pork butt into 2- to 3-inch chunks (if using ribs, don’t cut). Divide among 4 gallon freezer bags. Sprinkle the meat with the rub, shaking the bag to coat evenly. Add liquid smoke. Freeze. To serve: Thaw. Cook in slow cooker 10-12 hours on low or 5-6 hours on high, until meat is pull-apart tender and reaches an internal temperature of 190F. Shred meat. Serve with warmed barbecue sauce.

    Forgive me if this is a stupid question… There isn’t any liquid in the slow cooker. Isn’t that going to make the meat really tough and dry? Just wanted some clarification before I try this.

      Hi Christy, the .5 cup of liquid smoke will be enough liquid. The pork itself will give off juices while cooking. If you feel more comfortable, you could always add .5 cup of beef broth or water. Enjoy!

        This turned out great! I added 0.5 cup of water just to be sure but it didn’t really need it. I was just gun shy after having some tough pork recently. Thanks!
