Snack Attack: Peanut Butter Banana Smoothie

When school begins again, our mornings are rushed enough, but add in remembering to pack the kids’ lunches and it is just downright hectic. Streamlining any of these daily process is both a sanity and a time saver. For us that means breakfasts and lunches prepped the night before, or ready to pull from the freezer.  The kids all time favorite is Peanut Butter Banana Smoothie.  Served for breakfast with a muffin, or in a lunch box in a reusable  Squooshi pouch (which doubles as an ice pack).

Making sure lunch box meals give the kids the mid day boost they need, I always make sure to include 1-2 sources of dairy.   Dairy foods are a tasty, convenient and cost-effective way to power up with protein throughout the day. On average, one serving of milk, cheese or yogurt provides eight grams of high quality protein. Include a serving of fruit/vegetable, their favorite sandwich, and a little “note” from mom, and they are sure to power through their school day.

Peanut Butter Banana Smoothie

Ingredients:

  • 1 cup milk (preferably 2%)
  • 4 Tablespoons creamy peanut butter
  • 2 frozen bananas (I peel and place in a freezer storage bag the night before)
  • 1 fresh banana
  • 1 cup ice

Directions:

Combine all ingredients in a blender and blend until all ice is crushed and ingredients are combined.

Freezing Directions:

Follow directions above.  Transfer to quart sized freezer bags, label and freeze.  To Serve:  Thaw and enjoy.

Servings: 2

    Can you use coconut milk in place of 2%?
