Spicy Garlic Lime Chicken

Ingredients:

  • 2 Tablespoons lime zest
  • 2 Tablespoons honey
  • 1 Tablespoons lime juice
  • 3 teaspoons garlic, minced
  • 1 teaspoons pepper
  • 1 teaspoons sea salt
  • 1 Tablespoons paprika
  • 0.25 Tablespoons chili powder
  • 1 teaspoons allspice
  • 3 pounds chicken hind quarters

Directions:

In a small bowl, combine lime zest, honey, lime juice, garlic, pepper, sea salt, paprika, chili powder and allspice. Coat chicken hind quarters evenly in marinade. Grill chicken over medium heat, flipping half way through.

Freezing Directions:

In a small bowl, combine lime zest, honey, lime juice, garlic, pepper, sea salt, paprika, chili powder and allspice. Divide chicken hind quarters evenly between gallon freezer bags. Pour marinade over chicken, label and freeze. TO SERVE: Thaw. Grill chicken over medium heat, flipping half way through.

  3. Hi! Is there any other liquid to add? It doesn’t seem like enough for a marinade. Thanks!

      That is it. There isn’t a whole lot of liquid in this recipe, so I guess it could more accurately be described as a rub instead of a marinade. Just make sure that the meat is well coated, and you should be fine.
