Spinach Pie

 

One of the most important keys to eating healthier is to plan, plan, plan. For me personally, if I don’t have a meal plan in place for every single meal, it just isn’t going to happen, especially for lunch. Lunch is the hardest meal for me to eat healthy if I don’t have a plan. That’s why I almost have to have my freezer stocked with healthy lunch options – individual portions that I can just grab and heat. This spinach pie provides me a great option for lunch, something different than what I normally eat, along with a big serving of spinach! It’s a win-win!

Ingredients:

  • 1 cup fat free cottage cheese
  • 3 medium eggs
  • 0.25 teaspoon pepper
  • 0.50 teaspoon salt
  • 2 cloves garlic, minced
  • 10 ounces frozen spinach, thawed
  • 4 ounces fat free shredded cheddar cheese
  • nonstick cooking spray

Directions:

Preheat oven to 350. Spray pie pan with nonstick cooking spray. After spinach is thawed, drain and squeeze out all excess water (this is a very important part, so don’t skip it!). In a medium bowl, mix together cottage cheese, eggs, pepper and salt, garlic, spinach and shredded cheese. Pour mixture into greased pie pan. Bake for 45 minutes, or until pie is set in the middle. Remove from oven and let set for 5-10 minutes before cutting.

Freezing Directions:

Prepare as directed above and allow to cool. Cut into individual servings and place into freezer bags. Label and freeze. TO SERVE: Thaw. Reheat in microwave for 2 minutes.

    Could This Be Made With Fresh Spinach? If So, Would There Be Any Adjustments?

      Yes, it could be made with fresh spinach. It would need to be wilted in a saute pan first, and you would need quite a bit of it. Let us know if you try it!

    My mother in law gave me a spinach pie recipe that I have been trying to figure out how to make it healthier. This sounds great! One thing I do for portions is to bake it in a muffin pan, no need to slice it after!
