- 1.5 cups pancake mix
- 3 Tablespoons applesauce
- 3 Tablespoons coconut oil, melted
- 1 cups almond milk
- 2 cups strawberries, diced
In a large bowl combine pancake mix, applesauce, coconut oil, and almond milk. Gently fold in strawberries. Spoon pancake mix onto preheated skillet. When bubbles begin to appear, flip pancake and cook the other side.
Prepare pancakes per above directions. Transfer to a baking sheet and flash freeze. After flash frozen, divide pancakes into gallon freezer storage bags, label and freeze. TO SERVE: Thaw. Reheat in microwave 1-2 minutes.
