Sundried Tomato and Swiss Quinoa Patties

Admit it, we all have those days when we are really trying to be good and eat healthy, but all we crave is something unhealthy, fried, and oozing with flavor.  Rest easy, these little patties will satisfy your cravings, but in a healthy way. They are so yummy that your tummy will tricked – thinking that they are the fried goodness you craved, but your mind will rest easy knowing you haven’t strayed from your healthy eating habits.

Sundried Tomato and Swiss Quinoa Patties

Mix ingredients in bowl and let rest for 5 minutes. In a skillet over medium heat, heat 2 Tbsp of oil.  Form 1/4 cup patties from mixture and place in skillet.  Using a spatula, gently press patty mixture down onto skillet.  Fry for 5 minutes, or until the bottom is crispy and golden brown. Flip and fry for an additional 5 minutes.  If you flip the patty too early it will fall apart – but don’t worry – those little bites are yummy too!.  If desired, place additional swiss cheese on top of patty last 1 minute of cooking.

Freezing Directions:

Allow patties to cool completely.  Place in freezer bag. TO SERVE:  Reheat patties from frozen state in microwave or in frying pan.

Servings: 8 patties

    Hi! I’m wanting to try these today, but wanted to double check about the quinoa first – I’m assuming its 2 cups after its cooked, about how much is that before its cooked? Thanks!

      Yes the 2 cups is cooked quinoa. The quinoa I use is 1 cup uncooked yields 4 cups cooked. I would check with the package instructions on your quiona, but I assume the ratio will be similar.

    Thanks! I made them 1 1/2 times, and baked them (400 for 12min) and they turned out great.
