Sweet and Savory Pork Skillet with Apples

Fall is nearly here, and this is the perfect dinner to get your taste buds ready. Everything is cooked in one skillet allowing all the fall flavors to blend together and giving you a break on dishes.

Sweet and Savory Pork Skillet with Apples

Ingredients:

  • 4 slices bacon
  • 1.5 pounds pork chops, cut into one inch chunks (you can leave them whole if you’re not freezing)
  • 0.25 teaspoons dried thyme #1
  • salt and pepper to taste
  • 1.5 cups brussles sprouts, trimmed and halved
  • 1 cup butternut squash, peeled and cubed
  • 1 cup diced onion
  • 2 cups Granny Smith apples, cored and diced
  • 3 teaspoons minced garlic
  • 0.25 teaspoons dried thyme #2
  • 0.25 teaspoons cinnamon
  • salt and pepper to taste
  • 2 teaspoons olive oil (for cooking day)
  • 0.75 cups chicken broth (for cooking day)

Directions:

Heat a large skillet over medium low heat. Cook bacon in skillet until crisp, remove to a paper towel to cool. Increase heat to medium, reserving about 1 Tablespoon of bacon drippings (you will need more if your are cooking a large portion). Season pork with thyme #1, salt and pepper. Cook pork in bacon drippings until cooked through (7-8 minutes). Set aside. Crumble cooled bacon. Proceed to freezing directions, or heat olive oil (or additional bacon drippings) in the same pan. Add squash and brussles sprouts and saute 4-5 minutes. Add apples and bacon and saute another 4-5 minutes. Add garlic, thyme #2, cinnamon, salt and pepper and cook another minute. Return pork and bacon to the pan. Add chicken broth and bring to a boil. Reduce heat to low and simmer covered about 5 minutes until veggies are tender. Garnish with fresh herbs if desired.

Freezing Directions:

Cook bacon and pork as directed above. Cool pork. Meanwhile, divide brussles sprouts, squash, onion, apples, garlic, thyme #2, and cinnamon among gallon freezer bags. Season with salt and pepper to taste. Divide and add pork and bacon to freezer bags. Label and lay flat to freeze. TO SERVE: Do NOT thaw. Heat olive oil in a large skillet over medium heat. Cook frozen skillet mixture 8-10 minutes, stirring frequently, until veggies are crisp tender and pork has thawed. Add chicken broth and bring to a boil. Reduce heat and simmer 10-15 minutes until veggies are tender. Garnish with fresh herbs if desired.
