Sweet Summer Mango Kebobs

  • 0.5 cups basil, chopped
  • 1 teaspoons garlic, minced
  • 1 teaspoons lemon juice
  • 0.125 teaspoons salt
  • 0.125 teaspoons pepper
  • 3 Tablespoons olive oil
  • 2.5 cups chicken, boneless and skinless, cut into cubes
  • 3 cups red onion, cut into chunks
  • 2 cups red bell pepper, cut into chunks
  • 2 cups mango, cut into chunks
  • 4 wooden skewers


In a food processor, pulse basil, garlic, lemon juice, salt, and pepper until smooth. Slowly add olive oil and continue to pulse. Combine chicken and sauce in a freezer storage bag. Place in fridge to marinate for 2 hours. Meanwhile, soak wooden skewers in water for 10 minutes. After chicken has marinated, alternate chicken, mango, red onion and red pepper on skewers. Grill over medium heat, about 3-4 minutes per side. 

Freezing Directions:

Prepare sauce per above directions. Place sauce and chicken in a  gallon freezer bag. Place fruit and vegetables in a  quart freezer bag. Place quart bag of veggies in gallon bag of chicken. Label and freeze. TO SERVE: Thaw. Assemble kebabs on skewers, alternating chicken, tomatoes, and squash. Grill over medium heat about 3-4 minutes per side.

    I want to make this meal but I am confused by the freezer instructions. It says to divide the chicken and sauce among bags, but not how many bags. Also, the recipe says it serves 4, but is that the divided recipe or the whole recipe?
