The Secret Recipe Club: Buffalo Chicken Calzone’s from Itzy’s Kitchen

I was so excited to be participating in The Secret Recipe Club this month! It was my first month and boy was it fun. No matter how overwhelming this blog becomes (and let’s face it, there are days when it is VERY overwhelming) I hope I never stop enjoying finding new-to-me blogs. It always amazes me to see what others are creating in their kitchens.

I received my assignment several weeks ago and found my way to Itzy’s Kitchen. After reading through a few posts I headed to her favorite recipes page to decide what it is that I wanted to cook up. As I was perusing the list I noticed that she had a great many vegetarian and vegan recipes and I thought that our new OAMM vegetarian folks might really like to see something from this section of her site.

Then I saw it. . .Like a beacon of light through a deep dark cave. Halfway down the page I came to a halt. I had found my winner. . .Buffalo Chicken Calzones! Because we all know that Buffalo Sauce (and sun-dried tomatoes) are my love language.

The EASIEST dough I have EVER made!

So I set to work deciding how I was going to orchestrate this recipe. And since I discovered that I can actually handle Kelly’s Whole Foods Pizza Dough recipe I decided to even make my own pizza dough for this one. And well, I made a few changes too. . .I had to Once A Month Mom it, right? I decided against the tomato sauce because I thought it would take too much away from the buffalo flavor. I replaced it with ranch dressing instead. I also increased the hot sauce and the cheese as I like mine with a bit of a kick (don’t worry, it isn’t much of a kick) and I am not watching my calories so I slipped in some extra cheese. But I balanced that extra cheese fat with some celery. :)

At any rate. We LOVED, LOVED, LOVED these! I will definitely be making them again and maybe if I can twist Pam’s arm I might even be able to get them on an upcoming menu. :) What do you think? Buffalo Chicken Calzones

  • 2.67 cups chicken, cooked and diced
  • 0.5 cups ranch dressing
  • 3 Tablespoons hot sauce (or your favorite buffalo wing sauce)
  • 1.33 cups celery, diced
  • 1 cup Mozzarella cheese
  • 1/2 batch of homemade pizza dough (or 2 cans refrigerated pizza dough)
  • 4 Tablespoons olive oil
  • 1 teaspoon garlic powder
  • .25 cups Parmesan cheese


Oh, these are going to be good!

If making your own pizza dough, mix and allow to rise. When pizza dough is ready, roll into a 2 14×17 sheets (approximately). Preheat oven to 450 degrees. Cut into fourths with a pizza cutter. In a medium bowl mix together chicken, ranch dressing, hot sauce, celery and Mozzarella. Place chicken filling on each of the 8 squares of dough. Fold the dough over and pinch/seal the ends.

Place calzones on a cookie or baking sheet and brush with olive oil. Sprinkle with garlic powder and Parmesan cheese. Place in preheated oven for 15-20 minutes or until baked and golden brown. Remove and serve.

Freezing Directions:

Follow all directions above including baking. Set aside to cool or flash freeze. Place in gallon size freezer bags and freeze. To serve: Remove and reheat in microwave for 1-2 minutes or in oven for 10 minutes. Serve.

    Oh these sound right up my alley! Funny, I need to follow your blog. I just started freezing things this past week. I made several homemade freezer pizzas (I make homemade dough, homemade sauce and homemade sausage! So my kids like my pizza better than the store :) ) and want to start making extra meals when I cook dinner. I don’t really want to do it monthly, but making extra meals would work great for me!     These were awesome!! The filling itself was awesome, I’m surprised any of it made it into the crust! LOL I also ended up using pie crust because I had some in the fridge. Turned out great! Another thing, if you added a little more hot sauce and ranch it would make a great dip!!

      So glad you liked them. Yes, I tend to add more hot sauce myself. But we have a lot of parents with kids around this blog so we try to be mid-grade on hotness. I am with you on spicing them up a bit though.
