Tilapia with Mango Strawberry Salsa

All of the health experts agree that fish should be a part of your weekly diet.  The realistic reason why I think fish should be on the menu plan frequently is because it is so quick and easy to cook.  I love that I can throw this tilapia in a skillet, and it can be on the table in less than 10 minutes.  As hectic as it is after 3 p.m. at my house, dinner in 10 minutes is awesome.  And this Mango Strawberry Salsa is so yummy! You can eat it on all kinds of things- crackers, chips, bacon, you name it!

Tilapia with Mango Strawberry Salsa

Ingredients: 

Directions:

Heat olive oil in a skillet on stovetop over medium heat.  Cover each side of tilapia with blackening seasoning.   Cook tilapia in skillet for 3 minutes on each side until cooked through.  In a medium bowl while the tilapia is cooking, mix together strawberries, mango, red onion, basil, lemon juice, salt, and pepper.  Remove tilapia from heat and top with mango strawberry salsa.

Freezing Directions:

Before cooking, place tilapia in a gallon freezer bag.   In a bowl, combine strawberries, mango, onion, basil, lemon juice, salt, and pepper.  Stir well to combine.  Spoon salsa into a quart freezer bag.  Place quart freezer bag into the gallon bag.  Label gallon freezer bag and freeze.  To serve: thaw in fridge.  Remove tilapia from freezer bag and cover each side with blackening seasoning.  Heat olive oil in a skillet on stovetop over medium heat.  Cook tilapia in skillet for 3 minutes on each side until cooked through.  Remove from heat and top with mango strawberry salsa.

    Made this for dinner last night and it was yummy! Both hubby and I want to try it next time with lime and cilantro in place of the lime and basil!
