TRADITIONAL February 2011 OAMM Menu (OAMC, Once A Month Cooking, Freezer Cooking)

It is February which means that this site is now officially two years old! I can’t even believe it! It has flown by. I don’t have any crazy celebration plans in the works. Sorry. I am, however, working on building the offerings you are going to find here on this sight so stay tuned, by Summer 2011 you are going to see some great things. And if you are a loyal reader, thank you for a wonderful two years.

Tilapia with Garlic Roasted Tomatoes & Corn

As for the menu, there a lot of tasty treats in store for you this month. Raspberries are going to start coming into season this month as well as the ever present broccoli. We are still in the heart of the cold winter months (most places) so there is definitely a hint of winter stews and soups lingering about. Then we also have to start preparing for Lent which starts in March so there is the addition of some tilapia recipes. Don’t like tilapia? Consider substituting chicken in it’s place but make sure that you adjust the cooking time, it will be much longer for chicken.

Sample Label

These customized labels are designed specifically for the TRADITIONAL February 2011 Once A Month Mom Menu. They contain not only the name of the dish but also the serving instructions for preparing the dish on your serving day. They make preparation of the dishes hassle free.

These labels are designed to be printed on Avery 8163 or equivalent! Readers who didn’t have labels available suggested just printing them on paper and taping them.

Test Cooks

Each month we have some wonderful volunteers who “test” out the menu prior to publication. They do an amazing job of helping to eliminate confusion and mistakes. They may not catch everything but they sure do catch A LOT! Here is a little bit about this month’s test cooks:

  5. Just finished chopping and I’m really glad I made my veggie scraps crockpot vegetable stock overnight. I got about 1/2 gallon of new scraps for the next batch tonight! Yummy yummy veggies.

      Sorry. Yes there is, I am hoping to work on it this weekend! We have had an ice storm, a minor surgery and some very tiring an unexpected moments this week. I am so glad that you miss it and are looking forward to it. :)

    OMG I made the Raspberry Lemon muffins, they are sooooo good. I don’t think the kiddos will eat them, they are a little tart, but on theirs I may just drizzel some powdered suger milk frosting and then they’ll gobble them down too.
