Tropical Chia Smoothie

 

This is a delicious smoothie for summer Рfull of great tropical fruit flavor, and those interesting little chia seeds. What are chia seeds, you ask? Chia seeds are a great source of Omega-3s, and fiber. They are easy to add to smoothies, oatmeal, yogurt, etc. and can even be a substitute in baking for eggs! They become gelatinous in water, which helps to keep you fuller, longer, and they have a mild, nutty taste. Chia seeds are a great addition to this smoothie, and to any diet, in general.

Tropical Chia Smoothie

Ingredients:

  • 0.75 cup unsweetened coconut milk, refrigerated
  • 1 cup frozen mango pieces
  • 1 cup frozen pineapple pieces
  • 1 medium banana
  • 1 Tablespoon chia seeds (for serving day)

Directions:

Place coconut milk, mango pieces, pineapple pieces and banana in blender. Blend until smooth. Stir in chia seeds before serving. 

Freezing Directions:

Place coconut milk, mango pieces, pineapple pieces and banana in freezer bag. Label and freeze. TO SERVE: Thaw slightly. Empty contents of bag into blender. Blend until smooth. Stir in chia seeds and serve.

    Can I blend this and freeze for single servings, stirring in the chia seed day of serving?

      Sherry – you certainly can. I do that a lot with my smoothies – that way they are just an easy grab and go from the freezer.
