Tuna Melt Quesadilla

Tuna is a love or hate protein source.  I love it because it is an inexpensive meat option for my daycare and family, but I have found that the kids aren’t too fond of it.  I have tried many different ways to introduce – or better yet hide – tuna in meals for my toddlers…..all of which yield very poor results.  That is until I experimented with the Tuna Quesadilla.  The tuna flavor in these quesadillas isn’t overwhelming when paired with the mayonnaise and cheese.  And when spread in-between tortilla shells and heated until crispy, turn into a very delicious and healthy meal! My kids loved them, my husband couldn’t get enough of them, and they are even great for a quick before practice snack for the older kids.

Tuna Melt Quesadilla

In a medium bowl mix together all ingredients except tortillas. Heat a sauté pan over medium heat. Place one tortilla on skillet and then a heaping 1/2 cup full of mixture in each tortilla, spreading to the edges. Top with another tortilla. Heat for 1 minute or until bottom tortilla is golden brown. Flip and heat for another 1-2 minutes until that bottom tortilla is golden brown. Transfer to plate and continue with remaining tortillas and filling. Using a pizza cutter, cut each quesadilla into 8 wedges.

Freezing Directions:

Follow directions above. Cool completely. Divide among indicated freezer bags. TO SERVE: Reheat in microwave til warmed through.
