Vegan Fresh Veggie Pizza

My husband and I used to order pizza all of the time from a little pizza shop near his work. They have the best vegan pizza and even though we are not strictly vegan, it was our favorite. Now my husband works nowhere near our favorite pizza shop and it is very inconvenient for us to visit. I made this pizza in an attempt to fill the void in our life. I realized that the best part of the pizza shop’s pizza was the cashew cheese in which it was smothered. After experimenting for awhile, I think I got pretty close to the same taste. I chose vegetables that are relatively easy to find year round, but you can experiment with whatever vegetables you have on hand.

Vegan Fresh Veggie Pizza

Ingredients:

  • 1 cup cashews
  • 4 cups water #1
  • 2 Tablespoons lemon juice
  • 3 Tablespoons water #2
  • 0.5 teaspoon salt
  • 1 teaspoon garlic, minced
  • 1 pre-made, vegan pizza crust
  • 0.75 cup pizza sauce
  • 0.33 cup tomatoes, chopped
  • 0.33 cup mushrooms, chopped
  • 0.33 cup green peppers, chopped
  • 0.33 cup red onions, chopped
  • 1 ounce black olives, sliced

Directions:

Place cashews in a medium bowl. Cover with water #1. Allow cashews to sit for at least two hours. Preheat oven to 400 degrees. Combine cashews, lemon juice, water #2, salt, and garlic in a blender. Blend until smooth. Spread pizza sauce on pizza crust. Dollop cashew mixture on top of sauce. Cover with tomatoes, mushrooms, green peppers, red onions, and black olives. Cook pizza for 10-15 minutes.

Freezing Directions:

Place cashews in a medium bowl. Cover with water #1. Allow cashews to sit for at least two hours. Preheat oven to 400 degrees. Combine cashews, lemon juice, water #2, salt, and garlic in a blender. Blend until smooth. Spread pizza sauce on pizza crust. Dollop cashew mixture on top of sauce. Cover with tomatoes, mushrooms, green peppers, red onions, and black olives. Flash freeze pizza. Wrap pizza in plastic wrap and then aluminum foil. Label and freeze.

    This cashew cheese is amazing! I topped my pizza with mushrooms, black olives, kale, and artichoke hearts and the cashew cheese made it perfect. I’ve already talked my guy into pizza again next week because I want to eat more of this cheese. You are my pizza hero.
