Test Cooks

Each month we have some wonderful volunteers who “test” out the menu prior to publication. They do an amazing job of helping to eliminate confusion and mistakes. They may not catch everything but they sure do catch A LOT! If you are interested in test cook, feel free to volunteer. Here is a little bit about this month’s test cooks:

  • Barb McLaughlin  – I am a mom of 2 teen boys and married to my husband for 22 years.  I work full time as a teacher and am studying to become a certified personal trainer and fitness instructor.  My love of exercise balances out my love of food and trying new recipes!  My brand new blog:  www.bloggingbarb.blogspot.com

Where can I find nutrition information for the recipes? I’m interested in trying the vegetarian menu, but I’m dieting. I’m curious how many calories per day the menu averages. I see there is a diet menu, but it’s not vegetarian. I suppose with some ingredient substitutions, the vegetarian menu could be made lighter. Can you shed any light on nutrition info?

Is it possible that the recipe for the peach banana muffins is wrong? 3 3/4 cups of flour for 6 muffins seems a bit too much. I’m afraid to make them but they sound so good!

I’m not sure what the average size of watermelon is around the country, but three medium-sized watermelon got me about 15 cups of watermelon, a bit more than the 3 cups called for in the recipe. Luckily, I also found a recipe for watermelon margaritas.
