Vegetarian Buffalo Chicken Bagel Pizzas

My husband is a big fan of chicken wings. Needless to say, I am not. But I do love the sauces they put on them. I think I’d be OK with a breadstick and a bowl of buffalo sauce if he drags me to another wings restaurant. But, when we’re at home, I can make us all these delicious buffalo chicken bagel pizzas. You can make these in a wide range of homemade to convenience by choosing what to buy and what to make at home. I often make homemade bagels and simply use chickpeas for the “chicken.” You could also buy the bagels and make seitan “chicken” or buy store-bought “chicken.” The recipe can also easily be made vegan by subbing in Daiya Mozzarella cheeze and eliminating the bleu cheese crumbles.

Buffalo Chicken Bagel Pizzas

Ingredients:

  • 8 bagels
  • 4 cups “chicken” substitute, cubed if necessary
  • 4 cups mozzarella cheese
  • 1 cups buffalo sauce
  • 0.5 cups blue cheese crumbles

Directions:

Slice bagels in half. Divide “chicken” among bagels and top each with buffalo sauce, mozzarella and blue cheese crumbles. Tip: I often use chickpeas as a chicken substitute. You can also use cubed seitan or pre-packaged “chicken” cubes, strips or cutlets.

If you are serving on the day you are cooking. Bake at 350 for 10-15 minutes. Otherwise, skip directly to freezing directions after building pizzas.

Freezing Directions:

Flash freeze on cookie sheet. Wrap in plastic wrap. Divide among gallon freezer bags. To serve: Bake in oven at 350 for 15-20 minutes.

  1. What is “chicken substitute”? When I first saw these, I thought they were chick peas. I think I’ll use chickpeas! They look great!

      Yes Debbi, I used chickpeas here. Chickpeas are a great chicken sub; they work very well. There are also chicken substitutes sold in most grocery stores. Quorn, Morningstar and Gardein make a few of them or you could use seitan.

    Ok… I love buffalo wings too, but hubby usually makes it himself. So, I need to know just where to go buy buffalo wing sauce. I would imagine the grocery store, but is it a powder you mix with something, or in the condiment section of the store? Help please! I planned to make one of your recipes tomorrow and don’t have the sauce!!! I don’t know what I was thinking. I thought you’d have a recipe for us! You’re so good like that with add ons and such. ;) Anyway, seriously, if you could help me out by telling me a good brand and whether it’s ready to use or what; I’d really appreciate it!       Buffalo wing sauce is usually found in the condiment aisle in jars. It is near hot sauce. I (Tricia) highly recommend Frank’s Buffalo Wing sauce. There are others. You could also Google a sauce to make as it is VERY EASY too. I am sure that you will thoroughly enjoy this recipe.

    Just found your blog, and I have to say that these are delicious! I was a bit skeptical using chickpeas but they’re great, and even taste good cold.
