Walking (Vegetarian) Tacos

I went to a rodeo this summer and the people I was with got really excited when they saw walking tacos on the menu. Believe it or not (they couldn’t), I had never heard of a walking taco until then.  After I saw how good they looked, I understood the hype. The next day I got to work creating a vegetarian walking taco and oh my goodness, I could eat these every day. I originally made them with just beans, but thought that they needed something with a little more “meat-like” texture, so in came the TVP. Serve with any taco toppings you’d like!

Walking (Vegetarian) Tacos

Ingredients:

  • 1 cup textured vegetable protein (TVP)
  • 1 cup water
  • 1 Tablespoon olive oil
  • 7 teaspoons taco seasoning
  • 15 ounces pinto beans, rinsed and drained
  • 1 cup cheddar cheese, grated
  • 4 Tablespoons black olives, sliced
  • 4 individual serving bags of chips
  • 0.5 cup sour cream, for serving
  • 0.5 cup salsa, for serving
  • 0.5 head of lettuce, for serving

Directions:

Combine TVP and water in a medium bowl. Let sit for at least fifteen minutes, or until TVP has absorbed water. Heat olive oil over medium heat in a large saucepan. Add TVP and taco seasoning and stir. Cook for ten minutes. Remove TVP from heat and allow to cool. Stir pinto beans into TVP mixture. Crush bag of chips and open. Divide TVP mixture and all other toppings among the bags of chips.


Freezing Directions:

Combine TVP and water in a medium bowl. Let sit for at least fifteen minutes, or until TVP has absorbed water. Heat olive oil over medium heat in a large saucepan. Add TVP and taco seasoning and stir. Cook for ten minutes. Remove TVP from heat and allow to cool. Combine cheese and black olives in a separate medium bowl. Stir pinto beans into TVP mixture. Divide TVP among 4 quart freezer bags. Divide cheese/black olive mixture among 4 pint freezer bags. Label all bags and freeze. To Serve: Thaw. Heat TVP mixture in microwave for 1 minute, or until warm. Crush bags of chips. Divide TVP mixture and all other toppings among bags of chips.
