Yogurt Parfait Popsicle

 

I created these yogurt popsicles during my never ending quest to repackage healthy breakfast food into forms that my daughter will eat. I hit the jackpot on this one as she now refers to it as her “ice cream breakfast” and requests it all of the time.  She is happy because she thinks she gets dessert for breakfast. I am happy knowing that she is eating a breakfast full of Greek yogurt, berries, and granola, with no added sugar. These are also great as a snack or for dessert.

Yogurt Parfait Popsicle

Ingredients:

  • 1 cup vanilla yogurt #1
  • 0.75 cups granola
  • 0.5 cups strawberries, mashed
  • 0.33 cups blueberries
  • 1 cups vanilla yogurt #2
  • 4 each Popsicle sticks
  • 4  7 ounce paper cups

Directions:

Divide yogurt #1 among paper cups. Layer granola over yogurt. In a small bowl, combine strawberries and blueberries and pour over granola. Top with yogurt #2. Freeze for one hour. Push Popsicle stick into each pop and place back in freezer until frozen solid. Enjoy!

Freezing Directions:

After frozen solid, remove from molds, wrap each in wax paper, and place in gallon freezer bag. Label and return to freezer. To Serve: Do not thaw. Remove from freezer and enjoy!
