Mexican Grilled Cheese with Taco Soup

A few weeks ago when we were scheduled to have Taco Soup for lunch I decided that I needed a “Mexican” accompaniment. So, I came up with a grilled cheese that I have originally named “Mexican Grilled Cheese”. It was really yummy though.

Ingredients:

8 slices Cheese (Monterey Jack, Pepper Jack, Cheddar)

8 slices Bread

2 Roma Tomatoes, diced

1 Avocado, diced Butter

Directions:

Butter one side of each of the slices of bread. Heat the skillet to medium low and place the slice of bread in the pan, butter side down. Place 2 slices of cheese, 1/4 of the tomatoes, and 1/4 of the avocado on the bread. top with the other slice of bread butter side up. Once the bottom bread slice is browned, slowly turn the sandwich and brown the other side. Once cheese is melted and both sides browned, remove from pan and serve. Perfect accompaniment to the Taco Soup.

Servings: 4

Freezing Directions:

Not recommended as items may get soggy and turn brown.
