Better Than the Freezer Aisle: Copycat Smart Ones Breakfast Quesadilla

Ingredients

4 servings
  • 1 cup Egg Substitute
  • 1 cup Cheddar Cheese, Mild, 2%, Shredded
  • ¼ cups dice Bell Pepper, Red
  • ¼ cups dice Green Onion (Scallion)
  • ½ teaspoons Garlic Powder
  • 4 individual Flour Tortillas (8-inch/Med)

Freezer Containers

  • 1 Gallon Freezer Bag

Supplies

  • Cooking Sprays
  • Plastic Wraps

Directions

Spray skillet with a non stick cooking spray and heat over medium heat. In a small bowl, combine egg substitute, cheese, bell pepper, green onions and garlic powder. Pour egg mixture into skillet and scramble eggs. Once eggs are cooked, divide into tortillas and fold tortillas in half. Spray skillet with a non stick cooking spray. Cook quesadillas on each side for 4 minutes. Remove from heat and serve.

Freezing Directions

Spray skillet with a non stick cooking spray and heat over medium heat. In a small bowl, combine egg substitute, cheese, bell pepper, green onions and garlic powder. Pour egg mixture into skillet and scramble eggs. Once eggs are cooked, divide into tortillas and fold tortillas in half. Spray skillet with a non stick cooking spray. Cook quesadillas on each side for 4 minutes. Remove from heat and allow to cool. Wrap individually in plastic wrap. Divide between indicated number of freezer bags, label and freeze.

Serving Day Directions

Reheat in microwave.
