Better Than the Freezer Aisle: Make Your Own Evol Fire Grilled Steak Quesadillas with Guacamole

Ingredients

8 servings
  • ½ tablespoons Olive Oil
  • 8 individual Tortillas
  • 1 cup cook and chop Flank Steak
  • 2 cups Cheddar Cheese, Shredded
  • 8 ounces Black Beans, Canned
  • 1 cup cook Brown Rice, Short-Grain
  • ½ cups Salsa
  • 2 cups Guacamole

Freezer Containers

  • 2 Gallon Freezer Bags
  • 8 Pint Freezer Bags

  • Plastic Wraps

Directions

Heat olive oil in a large skillet over medium heat. Meanwhile, layer one half of each tortilla with 2 Tablespoons steak, 1/4 cup cheddar cheese, 2 Tablespoons black beans, 2 Tablespoons cooked rice, and 1 Tablespoon salsa. Fold in half and carefully place in hot oil. Cook 2-3 minutes until browned. Flip with a spatula and cook another 2-3 minutes or until browned and cheese is melted. Remove to a plate or wire rack to cool. Repeat until all quesadillas have been cooked. Slice into triangles and serve with guacamole.

Freezing Directions

Divide guacamole among pint freezer bags and place inside the larger bag. Label and lay flat to freeze.

Serving Day Directions

Reheat quesadillas in the microwave for 30 seconds. Serve with thawed guacamole.
