Skinny Chicken Poblano Soup

Ingredients

  • 4 cups Chicken Broth/Stock
  • ½ cups seed and dice Pepper, Poblano
  • ¾ cups dice Onion
  • 1 tablespoon Cumin
  • ½ tablespoons Chili Powder
  • 2 ½ cups dice Chicken, Boneless Breasts
  • ¼ cups chop Cilantro, Fresh
  • ¼ cups juice Lime

  • 5 Quart Freezer Bags

Directions

In a large stock pot, combine chicken broth, poblano peppers, onion, cumin and chili powder. Bring to a boil. Add chicken, cilantro and lime juice. Reduce heat to simmer, cover and cook for 30 minutes.

Freezing Directions

Reduce heat to simmer, cover and cook for 30 minutes. Allow to cool completely. Divide between indicated number of quart freezer bags, label and freeze.

Serving Day Directions

Reheat in microwave for 1-2 minutes.
