Ingredients

  • 2 tablespoons Olive Oil
  • 1 pound Ground Chicken
  • ⅔ cups dice Onion
  • ⅛ teaspoons Salt
  • ⅛ teaspoons pepper #1
  • 2 teaspoons mince Garlic, Cloves
  • 2 tablespoons peel and mince Ginger, Fresh
  • 2 ½ tablespoons Soy Sauce, Gluten Free
  • 4 teaspoons Rice Vinegar
  • 1 tablespoon Sesame Oil
  • 1 tablespoon Peanut Butter, Creamy
  • ½ tablespoons Water
  • ½ tablespoons Honey
  • 2 teaspoons Spicy Thai Chili Sauce
  • ⅛ teaspoons pepper #2
  • ½ cups dice Green Onion (Scallion)
  • ½ cups drain and chop Sliced Water Chestnuts, Canned
  • Serving Day Ingredients

Directions

  1. Heat oil in a large skillet and add chicken, onion, salt, pepper #1.
  2. Next add garlic and ginger and cook until chicken is no longer pink.
  3. In a microwave safe bowl, combine soy sauce, rice vinegar, sesame oil, peanut butter, water, honey, chili garlic sauce and pepper #2.
  4. Microwave for 20 seconds and stir until smooth. Add to skillet.
  5. Add green onions and water chestnuts and cook until onions are soft and water chestnuts are heated through.
  6. Spoon into chilled lettuce leaf.
  7. Sprinkle with peanuts.
